Grape Varieties : Blending of Syrah and Grenache (with a majority of Syrah).
Soil Type : Clayey and chalky.
Yield : 30 hl / ha. Yield limitation through pruning short and selective pruning if necessary.
Type of culture : Environment friendly culture.
Vinification : The crop is vatted after a selective picking by hand and a total destalking of the grapes. The fermentation occurs only after a partial extraction of the skins under controlled temperature. The maceration period is about 40 days.
Maturing : In new oak barrels only. The ageing period depends on the different vintages (12 to 16 months). At the end of ageing, all the barrels are tasted and only the best are selected to constitute the final blending.
Packaging : Bourgogne Sommelière 750 ml bottles. Magnums Bourgogne Tradition 1.5 L. Cork stopper.
May be aged: 10 to 12 years.
SOMMELIER'S APPRECIATION
In the mouth, it is big an complete with a density made of tannins which are present but mellowed, creating a wonderful finish of incredible length.
