Grape Varieties : Blending of Cabernet and Merlot (with dominant Cabernet).
Soil Type : The Merlot is planted on a chalky soil, the Cabernet on a graved soil.
Yield : 40 to 45 hl / ha.
Type of culture : Environment friendly culture.
Vinification : The grapes are put in vats after total destalking. The fermentation occurs after partial extraction from the skins. The maceration period is determinate after tastings made by the cellar master.The two grapes constituting this cuvee are vinified separately. The temperatures of fermentation is controlled in order never be over 25°C during the “sugar phase”.
Maturing : 12 months in oak barrels (French from Allier). The Cabernet and the Merlot are aged separately. After ageing, the different barrels are tasted, selected and then blended. No fining.
Packaging : Bordelaise Tradition 750 ml bottles. Cork stopper.
May be aged : 5 to 8 years.
SOMMELIER'S APPRECIATION
The ruby robe is highlighted with touches of Carmen.
The nose offers a large pallet of aromas such as mocha, undergrowth and liquorice creating à pleasant harmony.
In the mouth, it’s ample attack rises progressively. It’s rich fleshy and fruitiness, slides to a long and persistent finish.
